2020 bottle from their cider club. I missed their on-line cheese pairing, so I'm sneaking this chunk of peppered Toscano that is really dope & lingering. My wife bought it & I ate it all like a monster. Stemless wine glass @home. Looks like a hazy. Lingering wisp of head. Juicy, browned, honey-ed, sharp & sweet, appetizing apples on the nose. Like good, un-fermented & fresh cider. Taste is some of that but it bites back with bitter, smokey, slightly savory & tart apples. Tons of skin, deep apple sauce sweetness wrecked by cheek-clenching astringency. Light campfire, caramel & straight crushed Aspirin finish wipes you out. Thick, yeasty texture, hidden acidity, low tart, full carbonation, mouth numbing. Very polar. Fun & striking. Might finish the bottle or run to Walgreens for a bag of lemon drops.
