Formosa, or Beautiful Island was an early name for the island of Taiwan. This cider was dreamed up in collaboration with our friend Jinson Chan of High Side, a Taiwanese street food restaurant in Fairfax. Fresh guava with sour plum powder sprinkled on top, or Bā lè Méi Zi, is a popular snack in the market stalls of Taiwan and a perfect match of flavors for early season apples. For this cider, Jonagold apples were pressed and fermented with a blend of pink guava and sour plums and then finished with a nice big pinch of pink sea salt.

On tap @TreeRock. Goblet. Clear, filtered, golden brew with a wisp of head. Mellow, quiet apples with a slight guava warmth. Not as tart or sour as expected, but there's a little pinch. Dusty, plum-y richness. The guava hints with a unexpected creamy sweetness laced around caramel(oxidation?). Apples start to peek around the corner once it warms a tad. Basic baking apples, a little thin on flavor besides skin & seed. Salt is on the tongue in between sips. Soft, subtle carbonation. Abv feels a touch stronger than the 5.5 listed. Thin, semi sweet leaning dry. Overall, not as cool as expected. Okay.

16 ounce can shared by hershiser2 at the Murky Chocolate Ham tasting. Pale pinkish beige, thin head. Aroma of guava, salt, banana, dry apple. Taste is dry apple, salt, guava, apple skins. A little thin.

Light gold pour. Sweet apple nose. Sour apple taste with wine sap palate. Nice clean taste and flavor
