Hand crafted sparkling cider produced by Frederic Goussin and his family. The hundred year old orchard was planted in 1900 and lies between the border of Champagne and Burgundy in the "Othe" forest. The Goussin family are respectful farmers using no chemicals. Hand harvested, more then 13 ancient apple varieties are used to make the cider, apples all of local origin.

$16.99 bottle. Quite the explosive opening. Pours with a crystal clear deeper yellow hue. Lots of carbonation, but typical cider or champagne retention. Lightly sulfury and musty aromas, Brett, zesty acidity and ripe apple. Wooden and complex. Lightly carbonic. Flavors are mostly dry with a very bright and lightly sweet apple character and a great acid balance. Mildly funk notes of leather, horsey Brett and tropical fruit round out the background. Great balance with intense carbonation. One of the better ciders I’ve had in quite a while!

Bottle from a Frankly Wines near Chambers St. Tried not to serve this one very cold.
Chalice. Champagne. Crazy active underneath. Light amber. Clear.
Sharp, acidy apples. Leather & a mild sulfurous funk. A bit shy.
Drinks pretty good. Intense apple peel flavor & the accompanying dry mouth. Just a touch of twang & dip of caramelized grain sweetness. Maybe some woody vanilla coming up as it warms.
Bright, but not overwhelming acid. Tart, squeaky, bone dry finish. Moderate carbonation. Not quite beaded. No flawed cheap white wine flavors. Sloshable.
Awesome. Not as compact or minerally as Louis Dupont, but still great.
