Bubbly Creek is the first brew in our South Side Sour line. The name is inspired by the once funk laden South Branch of the Chicago River which emanated from the Union Stock Yards. In The Jungle, Upton Sincliar describes Bubbly Creek:
“The chemicals that are poured into it undergo all sorts of strange transformations, which are the cause of its name; it is constantly in motion, as if huge fish were feeding in it, or great leviathans disporting themselves in its depths.
Our Version of the Bubbly Creek is a traditional German Style top-fermented wheat beer made with both traditional warm-fermenting yeasts and lactobacillus culture. Berliner Weiss beers have a rapidly vanishing head and a clear, pale golden straw-coloured appearance. The taste is refreshing, tart, sour and acidic, with a lemony-citric fruit sharpness and almost no hop bitterness. It is slightly tart and is intended to be a crushable, frequently imbibed concoction.

Bottle thanks to Brian. Pours a cloudy yellow with small white head. The aroma is dough, wheat, lemon zest. Thin body, lemon, dough, wheat, nice tartness, very good.

At the House of Blues, Chicago, December 2015. served in a full shaker. gold color, low carbonation. good flavor, grapefruit, some acid and citrus, a little wheat is noticeable. Alcohol is not perceivable. It is more sour than many of its style. Surprisingly good beer from a brewery I have never heard of.

Draft. From notes. Dry and tart with light lemon. Wow, this is a winner. Looking forward to whatever comes next from these guys.
