Baird Family Farms is a neighbor in Dayton, OR which has been growing legendarily sweet and juicy peaches since 1979. To make the penultimate beer in your Cellar Society 6 we obtained a raft of ripe fruit and added them—after pureeing by hand—to a single Old Tom Gin barrel filled with Sebastian saison and our “Amigos” house sour blend, cultured since the earliest days of buildout. After refermenting with those peaches and bottle-conditioning the beer has gone to truly delicious new places.

Poured from a 750 ml bottle. Aroma is really nice with moderate gin notes with quite a bit of peach hidden behind the floral and herbal gin notes. Faint oak and hints of grain. Pours a somewhat hazy, dull, copper straw color with a medium small, thin, frothy, white head that collects and lingers for a bit on the edges. No lacing and faint legs. Flavor is slightly sweet with a but of grain and moderate acidity. Medium bitterness and faint oak notes. Lots of gin flavors with juniper, pine and floral notes. Medium light peach notes. Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a really nice beer. The peach really integrates well and tempers all the gin character. Some light funk and a bit of underlying saison character. By far the best W&P club beer I have tried so far.

Bottle thanks to Chow. Pours a cloudy yellow with small white head that lasts. The aroma is strong gin, peach flesh, oak. Thin body can gin, rosemary, peach candy, nice tartness, enjoyed this.
