The Moinette Bio* is a top fermentation, blond beer with refermentation in the bottle. It was created in 1990 and is, together with the Saison Dupont Bio*, one of the first two organic* beers. The Moinette Bio* has the combination of malt aromas, fruitiness and fine hops. It is very thirst-quenchening and strikes a fine balance between mellowness, fruitiness and bitterness. The long refermentation in the bottle ends up in a very complex beer. The production is being controlled by Certisys and has the label Biogarantie®.

Bottle. Hazy gold with a large white head. Aroma of oranges, cloves, white pepper, earth, flowers. Tastes pretty much of the same - initial orange/ mandarin sweetness balanced by spicy bitterness and modest funk. Light (the carbonation stops the considerable yeastiness from thickness) and thirst-quenching. Disarming - enough depth to be interesting but thoroughly quaffable. [4.1]Gold, large white head. Spices, earth, lightish dough. More hay and drier at the finish than remembered, perhaps less citrus flavours. Dangerously gluggable.

Bouteille 750ml.

Sample at The Royale in St. Louis as part of "The Funk" Tuesday beer tasting (as Foret). This beer is a hazy golden color with a medium foamy eggshell white head that recedes steadily. Sticky patches of lacing on the glass. Medium, effervescent body with flavors of banana, wheat, and grassy hops. The finish is fruity with a lingering tart aftertaste. Solid Saison all around.

Bottle, pours hazy golden yellow with a small white head. Aroma of yeast, citrus and orange peel. Flavour is dominantly orange zest, with the citrus and yeast in the background.

Rated the Dupont Foret Bottle. Pours like an unfiltered wheat. Nose and taste is a little flat. Rated 7/20/2000

75 cl. Bottle, 2 years past its “drink by” date. Deep, cloudy orange-gold color with a tall head going fast to lace. Spicy citrus aroma, grassy, fruity, still amazingly fresh, with rich malt. Rich honey malts in the mouth, fruity, with citrus and grass. Hops diminished, of course, malt smooth, full, and rounded. Almost enough bitterness left at the finish. Doesn’t have the full aged lovliness that I’ve found in the regular Moinette, but still ages well, although I wouldn’t wait this long next time.

Location: Bottle at the Bourgeois Pig, as Foret (along with my fondue, yum!), 4/10/10

Aroma: Notes of grains, hops, yeast, and spice on the nose
Appearance: Pours a hazy orange-amber color with a large frothy head
Flavor: Lots of yeasty flavors and spice flavors
Palate: Medium bodied with somewhat high carbonation, and a nice mouthfeel
Overall Impression: Overall, this is a pretty solid saison. I enjoyed this one. It doesn't have the complexity, and isn't quite up to the level of the Saison Dupont, which I am a huge fan of, but this one is still quite good.
