Time / Eternity is a blend of mixed culture beer fermented and aged in oak and refermented on plums.
The 2019 harvest blend was created from a blend of beers fermented with our wild culture in barrels that had previously been used to age Captive Spirits bourbon barrel aged 'Big Gin.'
These gin barrels were blended with mature wheat saison and then refermented on organic 'Shiro' and 'Howard's Miracle' plums grown in Okanogan, Washington by JC and Amber Kauffman.
This beer was refermented to condition in the bottle with raw Washington wildflower honey.

750ml bottle pours out straw color topped with a small fizzy head. Nose is nice funky notes some plum skins nice gin notes wow. Taste is more of the nice plum notes a little citrus great gin treatment.

Bottle thanks to Anthony. Pours a cloudy yellow with small white head. The aroma is strong floral, plum skin, oak. Thin body, plum, lemon, oak, funk, nice tartness, enjoyed this.

Poured from a 750 ml bottle. Aroma is moderately fruity with nice plum notes. Medium oak and green grapes notes. Light grain, tropical fruit and citrus. Light earthy, grassy funk. Pours a slightly hazy, yellow good with a medium sized, thick, fluffy, pillowy white head that recedes slowly to a small, thick white head that remains for quite some time. No lacing or legs. Flavor is slightly sweet with light grain notes. Light bitterness and moderate acidity. Medium plum and green grapes notes with light tropical fruit and citrus. Light oak notes and a bit of earthy, grassy funk. Mouthfeel is light bodied and soft with moderate carbonation. Low astringency and low alcohol warmth. Overall, a really nice beer. Great fruit, oak and yeast notes that all work well together. Much like all the Floodland beers I have tried, this one has a really nice water profile.
