Rustic saison fermented with a blend of Jester King's and our own wild house cultures along with koj-fancy rice which has been inoculated with Aspergillus oryzae spores. The first step in creating sake. White peach, nectarine and lemon rind finishes with a pop of perfumed rice and subtle earthiness from the koji. Rice solids left in solution add silkiness to the mouthfeel and Averie not being here to hang out with us leaves a sadness in our hearts.

Appearance - 8 | Aroma - 7 | Flavor - 7 | Texture - 8 | Overall - 8.5
On tap at GTOM. Pours cloudy yellow with frothy white head. The aroma is lemon zest, oak, earth, funk. Medium body, tart lemon, brett, oak, light funk, very nice.
