A blend of three different vintages - 2020, 2021, and 2022 - of 100% spontaneously fermented beer.

For Jester King SPON, we mix water from our well with local grains in a turbid mash, boil the wort for hours with aged hops from the attic of our barn, chill the wort overnight in our coolship, 100% spontaneously ferment the beer with native yeast and bacteria, and mature it for years in oak barrels before blending and natural refermentation in the bottle. The resulting beer is a unique reflection of the Texas Hill Country, the ecology of the Texas winter, and the people of Jester King.

Keg draught at the Rutland Arms, Sheffield. 2022 Vintage. Dark gold, little bit of haze with little to no head. Farmyard notes, earwax, sweet cooking spice, ripe tangerine. There's a sweetness to the taste that's unusual for a lambic.sourness I the finish with an almost floral fruitiness in the aftertaste. Top, top stuff.

Had 2018 vintage at Arrogant Sour Festival and 2017 vintage at One More Beer Festival. Almost clear orange with white head. Lots of funk, horse blanket, citric, medium+ sourness.

Big bottle. Pours an amber-ish color with a small white head that has decent retention and lasts. The aroma strong with funk, musty fruits, cat urine and some sawdust. The taste is mixed tart fruits, some cider vinegar and a bit grapefruit is discernible. The palate is full and bready with lively carbonation. Overall: decent sour

Bottle at Weathered 2022, pours a hazy golden with a small white head. Aroma is full of barnyard funk, some champagne-like effervescence and horse blanket. Flavour is not exactly authentic gueuze-like — there's lot of petroleum, barnyard funk, some unfortunate phenols, and leather. Lots of barnyard funk and leather, with a bit of a phenolic finish. Not bad.

Keg at Cloudwater Family & Friends 2020, Manchester Central, day two session one 21/02/20. Pinkish orange with a faded crimson cap. Nose is wood must, funk, pissy berries, damp alleyway, apricot. Taste comprises green berry must, funk grains, damp hay, grape must. Medium bodied with bite, fine carbonation, semi drying close with balanced acidity. Solid.

On tap at Jester King. Pours a cloudy orange with small white head. The aroma is strong oak, funk, straw, apple skin. Medium body, apple, lemon zest, funky, oak, nice tartness, enjoyed this.

Bottle, 0.375l, courtesy of my mother in law :) Aroma of barnyard, grape skin, wine, wood and cereals. Pours cloudy amber color with thin soapy off-white head, nice lacing and sparkling appearance. Tastes tart vinous, grainy, citrusy, woody and funky with crisp mouthfeel. Medium body, slick texture and lively carbonation in palate. Našponan…
