We're happy to introduce 2021 All-Texas SPON -- our first beer brewed with 100% Texas ingredients!
Specifically, Texas homebrewer Dustin Kirkland grew several dozen pounds of Cascade for us in his backyard. The water came from the Trinity Aquifer below Jester King. The barley and wheat were grown in west Texas and malted by Blacklands Malt, and the hops came from Dustin's backyard in Austin. The all-Texas wort was chilled in our coolship and 100% spontaneously fermented with native yeast. After about two years of maturation in oak barrels, we blended and bottled our first 100% Texas ingredient beer this past spring!
Our brewing team gets notes of grapefruit, tire shop, diesel, stonefruit, vinyl album cover, and being inside the Alamo.

0,75l bottle at home. Vintage 2020, 08/2021. yellow hazy color, small white head. smells corked, oxidized, spices, earthy. Ok smell, rather heavy cork notes. full body, soft carbonation. tastes citric, earthy, herbal, peppery, oak, light funk, tobacco. finishes lightly dry and lightly sour with notes of citrus, oxidation and earthy notes. Overall good but some off notes

Large, dark beige head immediately vanishes. Clear, deep copper-bronze with a rosy-peach hue.
Very bright and juicy with round acidity and soft oak. Well-aged stuff with no aggressive lactic, nor any acetic acid. Seems nice and malty with rich wheat, as well.
Bright and well-carbonated with piquant acidity adding gooseberry-like interludes throughout a lactic palate with soft, nutty, chewy wheat and big fruitiness throughout. Juicy with a long, tart, fruity finish redolent of orange wine and light stone fruit. Excellent texture and balance.

Lordy JK just keeps getting better and better, lots of gueuze notes, tons of oak sweetness. Delicious!

Bottle pour at Tørst. Pours dull orange brown. Funk, white wine, lemon zest, salty, grain, passionfruit, gooseberry, lime, hay. Medium body. Excellent.

Bottle thanks to Andrew. Pours a cloudy orange gold with medium white head that lasts. The aroma is strong funk, oak, straw, citrus. Slick body, apple, citrus, oak, funk, barnyard, nice tartness, enjoyed this.
