A blend of Missouri Saisons Dry-Hopped with Nelson and refermented with Nelson hops from Freestyle Farms in New Zealand.

Over the years we have experimented with our funky beers and elevated hopping rates, whether that be with intentional bitterness or dry-hopping, we have always loved the new flavors we have created. And, we like to think they stand rooted as Side Project beers, but with a subtle twist.

Single Farm will be a "single hop" from a "single farm" in a blend of our funky/tart Missouri Saison base beers. Single Farm (Nelson) showcases the extravagant flavors of hand-selected Nelson Sauvin hops from Freestyle Farms in New Zealand, in a foedre-aged base blend of Grisette, Saison du Fermier, and a Farmhouse Pale Ale. Normally Nelson hops showcases a ton of white grape / Sauvignon Blanc notes. However, when we fermented them with our mixed culture, our Saison yeast, and then used them to dry-hop, we ended up with juicy and overripe lime and tons of citrus fruit!

750mL bottle, blend #1, 2021, drunk 10/12/25.
Clear, bright, copper-tinged brass-golden with a big, creamy, white head that sits at cover persistently.
Nose is pretty spectacular for 4 years old. Man, the science of aged hops is really confounding and interesting, but there's something to the barrel that seems to preserve them. Whatever the case, this is still nice and hoppy with huge mineral/sulfur and delicate white wine-like notes. Gentle acidity and gentle oak contribute complexity and aroma without much acidity.
Similar in the mouth with big mineral/sulfur and big malt textures with excellent attenuation. Pinot Grigio-like wine notes and mild lime/lemon/kumquat. Doesn't seem tired at all. Incredibly carbonated at this point, even. Needs swirling. Really amazing mix of yeast, bug, barrel, hop...some slight caramel creeping in does show its age, but that's about the only "criticism" I can think of here.

Bottle. Pours a cloudy orange yellow with frothy white head. The aroma is citrus, grass, oak, floral. Slick body, juicy, citrus, oak, funk, nice tartness, enjoyed this.
