To celebrate the 10th anniversary of Grassroots Brewing, Shaun Hill of Hill Farmstead brewery traveled out to Colorado in November 2019 to meet Ryan Witter, now of Casita Cerveceria, Jean Broillet IV from Tired Hands Brewing, and Chad Yakobson of Crooked Stave to reimagine two classic Grassroots beers: Lemon Cello IPA and Wachu Saison. ⁣

Wachu Saison was originally a collaboration amongst Shaun, Ryan, and longtime friend Jean prior to his opening of Tired Hands Brewing. The new release is once again a collaboration of Shaun, Ryan, Jean, as well as Chad from Crooked Stave. This mixed-culture saison showcases rice, yuzu, and Szechuan peppercorns.

2020 bottle thanks to Adamchandler on this trade. Aroma of yuzu fruits, funky yeast and lemon juice. The flavor is much the same with a little bit of peppercorn in the finish. Light crisp body. Easy to drink.

Bottle thanks to William. Pours a cloudy yellow with medium white head that lasts. The aroma is citrus, yuzu, pepper, yeast, floral. Slick body, citrus, pepper, yuzu, light dry finish, very good.

Bottle from Chris and Ryan: pours super pale with a white head. Aroma is citrus, light saison, lightly spicy. Taste is citrusy, barely tart, not really getting a lot pf Sichuan peppercorn here, but getting a small note. Otherwise, this is a very nice, clean saison with a distinct yuzu taste.

375ml bottle - bottled February 26th 2020 - brewed for Grassroots at Crooked Stave in Denver - labeled as 5.5% abv - maybe time for a new entry? - hazy light gold - nose is lightly tart - the rice is really apparent - an underlying funk and muskiness/horseblanket - light, dry, and moderately tart - rice less apparent in the flavor than the nose - lemongrass, tart white grape - dry, lactic tartness on the tail end, with lingering tart fruit and a light funk - refreshing and enjoyable, but nothing revelatory.
