Southern Gentleman is a beer we brewed in late February of 2017 in honor of my late uncle, Lee Rowley, who left this world far too early. Anyone who knew him understood we was a true man of character and class. He would give you the shirt off his back, and wouldn't expect anything in return. He never talked down to anyone, and was a true southern gentleman. I thought the name was appropriate for this beer.
This beer starts with a golden sour base, where we substituted organic white grits, grown by the Santa Ana tribe north of Bernalillo, for the wheat that we would normally use. It was aged in second use Gruet Chardonnay barriques for 15 months, then refermented to dryness on 4.95 pounds per gallon of organic ripe Early Red Haven peaches from Hotchkiss, Colorado. The beer was bottled in early September with Sun Juan Valley wildflower honey as the priming sugar source and we have been patiently waiting for it to bottle condition. Using this much fruit is a necessary condition when using peaches, which present a delicate flavor, and do not express at lower fruiting concentrations. Using this much fruit, we lost a lot of beer to the trub. Based on this, we were not able to keg any of this beer.

TA = 19.2 g/L
ABV = 6.6.%

Bottle thanks to Russell. Pours a cloudy gold with small white head. Thr aroma is strong peach flesh, lemon zest, oak, funk. Thin body, tart peach, citrus, light funk, oak, very nice.

Bottle pour at Avery Invitational 2019. Cloudy orange, white head. Funky, peaches, some honey underneath. Soft texture, medium sourness. Medium bodied.
