For this iteration of Saison du Fermier - our Missouri Spelt Saison - we racked and rested mature Saison du Fermier in Gin Barrels for 6 months. This way we could infuse and extract the Gin botanicals from the oak. The robustness of Saison du Fermier was slightly more impactful than the barrel, so we further enhanced the Gin characters of the beer by finishing the final blend on Pink Peppercorns and Juniper Berries for my favorite Gin Barrel-Aged Side Project beer to date.

2021 bottle at the cellar, 2/14/24. Clear blonde, small head. Stinky sulfur and heavy mineral, light on the gin. Ginny flavor, cocktail like. Juicy, malty, acidic but not punchy. Interesting yet not sure I'm too in to that much gin with an already acid-forward beer.
