This tenth Senescence is a single wort spelt saison. It was open fermented in early Spring 2020 and then racked to neutral barrels to finish fermentation. It was brewed with a blend of Golding and Cascade hops, mostly whole flower. This beer was made, as most of our Senescence iterations, with the idea that it would be used in a blend, but is instead presented unblended as an insight into what a thread in one of our beers looks like without complement.
Refermented to condition with raw Washington honey.

Bottle thanks to Anthony. Pours a hazy golden with medium white head leaving spotty lacing. The aroma is floral, straw, yeast, citrus, oak, funk. Medium body, lemon zest, wheat, oak, light funk, light dry finish, very nice.
