This rum barrel aged wild ale is bone dry with crisp notes of spice imparted from saison yeast and a blend of wild yeast. Aged 2 years. Supporting notes of oak, rum, molasses, and lime.

Light clear gold body and okay foam. meaty rum aroma, good raisin, soft sugary mead character, slight hessian. Taste is a boozy rum and raisin, ending smooth and dry with good lingering sweetness. Nice but the wild ale is a bit of a wallflower here.

Just a slight haze, dull pale amber colour. Not much head. The rum barrel brings lots of buttery sweetness, though this doesn’t really go with moderate bitterness and light bugginess.

On tap at The Bakery, pours a clear bright golden with a small white head. Aroma brings out plenty of rustic saison yeast, wild critters, and nicely textured oaky rum. Flavour is certainly unique, with notes of vanilla, lots of oak, perfectly calibrated boozy rum presence, followed by rustic saison yeast and tons of bugs. Finishes rustic and buggy, accentuated surprisingly beautifully by the rum and oak character. Maybe a bit hot, but I'm a fan of all these flavours and the cohesion. Excellent.
