For this Druif, we macerated Limburg grown Souvignier Gris grapes on one- and quite a lot of our own two-year old lambik. The maceration took more than seven months. The lambikken in this bottle originate from two different barrels and three different brews.
The weighted average age of this blend upon bottling is eighteen months. A small portion of the lambik was brewed with Belgian grown cereals. The final fruit intensity is 353 grams of fruit per litre of Druif.

Bottled 31.05.2021. yellow hazy color, small white head. smells parfumy, citric, lovely funky notes, peppery, grapes, lovely smell. full body, soft carbonation. tastes peppery, oak, citric, funk, herbal, salty. finishes rather dry and medium sour with notes of pepper, oak and citric notes. love this, but rather on the sour side, lovely funk and citric notes, not very grape forward anymore.

Bottle at Monk's: pours golden with white head. Aroma is basement, earthy funk, white grapes. Taste is somewhat acidic, grapey, excellent.

75 cl. Bottle @ Ratebeer Odense Christmas Get Together, 2022. Pours Hazy deep Golden with a small White head. White White, green, rhubarb, honey, slight sulphur and Wood. Dry funky tart finish.
Juleafslutning i Ratebeer, Odense. December 2022 hos Mads. Cloudy golden with a lasting white head. Aroma of 3F funk, with obvious notes of white wine. Dry and very tart fruity and funky flavour.

Bottle sample at a tasting at Yoav's place. Cloudy yellow. Funky barnyard, cobwebs, citrus, vinous, grapes, dry, sour, juicy. Wonderful.

Flaska från 3 Fonteinen, blend 50, 20 - 21, 7,1%. Guldisig med vit krona. Fruktigt med mycket druvor i doften, nästan lite lätt vinöst, samt gula äpplen. Inte riktigt lika närvarande druvighet i smaken. Mer syra uppe på ytan, och samtidigt en stram avslutning som balanserar upp. Efter en bra stund i glaset framträder än mer gula äpplen som legat för länge och övermogna druvor.
Hapu, viinamarjane, veinine, tsitrus, vesine, nats nisune. Ok.

New 3 Fonteinen grape lambic, using Souvignier Gris grapes, a hybrid of both blue and white grape varieties developed in the sixties and typically used in colder regions (like the Low Countries) because of its resistance to cold and wet weather. Bought at Lambik-o-Droom and shared with my girlfriend. Open, moussy head, a snow white ‘ring’ in fact which thins and dissolves rather quickly; cloudy peach blonde robe with salmon-pinkish glow, turning more brownish and eventually quite murky as more of the bottle goes into the glass. Aroma of sour grapes and grape juice, dry rosé wine, damp hay, funky ‘horseblanket’ and goat stable, unripe apricot, fermenting orange peel, lemon flesh, green plum, kefir, freshly cut dark green grass, sour redcurrants. Crisp onset, very fruity, with prominent acidity (sour grape, green apple, redcurrant) but also a lovely, softening, ‘round’ grape juiciness; some unripe stonefruit astringency but the grapes really mellow things in a very elegant manner. Moderate carbonation for the style, supple body, a ‘deep’ bready backbone covered in lactic tartness, a thick blanket of grape juiciness but also grape skin tannins and lingering acidity of a more crisp and sharp kind. Funky aspects in the end but less strong than expected, tannic woodiness and continuing juiciness really tying everything together extremely well – even for this long-experienced and highly acclaimed producer. A very gracious, rich and elegant grape lambic – I think Armand would have been proud.
