Cider from the Chopin variety is produced according to the traditional Pét-Nat method, used in the production of natural ciders in Normandy and Brittany and in the production of sparkling wines. For production, we used freshly pressed apple juice from selected apples grown in our orchard, without the addition of water, sweeteners or carbon dioxide.

On tap at Hopito, pours a clear blonde with a small white head. Aroma is restrained, with green apple skins and a touch of apple juice. Flavour is a little drier than expected, with green apple skins and some apple juice concentrate. Pretty simple but the fundamentals are decent.

Taster at Omerta, Krakow, Poland. Pours pale gold, transparent, with no foam. Aroma is of grapes and apple. Body and carbonation are average. Some astringency. Taste is medium acidic. Final is fairly short.

From tap at Lawendowa 8, Gdansk, with UKM people 27.09.18. 2017 vintage. Clear pale yellow. White head. Aroma and taste of wild apples. Refreshing, but uncomplex. Dry mouthfeel.
