Key lime cobber. Lime zest, vanilla, cinnamon, oats.

Ms. Cherie DuPont, of the Miami DuPont’s, was fond of the tiny citrus and popularized it in her quaint boulangerie. Little is written about the Miami French but their impact on pastry is still felt today. 😳 , are you still reading this?

This iteration of The Creamery is not a Cheesecake Beer, but rather a Cobbler Beer. You’ll notice a different, uh, crust flavour?! I can’t believe I went to Cicerone School for this… 🤦🏼‍♂️

Brewed with lime zest, vanilla, milk sugar, oats and cinnamon with a small dry hop of Vic Secret. It has balanced acidity and is absolutely packed with cobbler character. The first sniff made this lil’ Instagram author blush and smile.

473ml can. Pours a cloudy yellow with a small, foamy, short lived, white head that leaves spotty lacing. Sweet aroma of bready pale malt, lime, vanilla and mild cinnamon. Sweet flavour of bready pale malt, lactose, lime, cinnamon, vanilla and light pineapple in a dry, tart finish. Medium body with a slightly creamy, sticky texture and average carbonation. Nailed what they were going for. A solid Pastry Sour.

Good bleach white pillow of foam on a cloudy medium yellow body. Smells of big and good fresh lime on the nose, slight pastry notes. Taste is good fresh lime, pastry notes. Ends with lingering bitterness that seems to be working against this. Still flavourful and very well executed.

Poured from the tap. Hazy yellow with small white head. Lime, vanilla, cinnamon, the flavours are all there, but they don’t quite hit. A little messy. Inoffensive at least.

Pale colour, thin head. Big sweet lime, ginger, vanilla. On the palate, tart base overtop the adjunct character is laid. The cinnamon comes through more clearly here – I bet that’s what I perceived as ginger on the nose – and of course the lime, vanilla and lactose are all quite abundant. It tastes like key lime pie, obviously, and that’s a good deal because that works for me.

Draught at the brewery
Murky pale blond colour. Never I smelled something like this, extremely powerful, vanilla and lime, frosting, 1000 cupcakes, macarons, cleaning product (but for once in a positive sense). Soft mouthfeel, moderate acidity, a bit lemony, strong vanilla, in the finish it feels like drinking vanilla extract. Pretty crazy actually.

On tap at Superflux, pours a cloudy bright yellow with a small white head. Aroma is loaded with tons of lactose and lime in seemingly ridiculous amounts, followed secondarily by a little of the vanilla and cinnamon. Flavour is intensely lime-dominated, with fairly laid back sweetness, and barely a trace of the other adjuncts. Ends up leaving the mouth feeling like a fresh minty lime toothpaste. Intense, unusual; not bad but not all that enjoyable.
