Plum mead with the old dessert plum variety Mallard.

Mallard is a very flavorful red skinned plum variety. Fermented cold and slow to maintain every nuance and natural acidity of the plum. In the finished mead you can almost taste the juicy but firm nuances from the red plum skin.

Expect a firm minerally acidity up front. Quickly followed by a long-lasting and sweet flavor of plump, juicy plums.

Sweet, sticky, fruity. Sweet plums, says red but would have believed yellow, honey. Some sourness, a bit vinous, nice but not at the same level as their others.

Slightly cloudy pale yellow. Big sweet smell, some honey, quite a lot of sticky overripe plum. Sticky, boozy, not thick. Taste is pretty odd, very sweet with still lots of honey, some plum. Combination doesn't really work for me. Very hot alcohol.
