We settled on a very complex, multi-blend of mostly spontaneous beers as follows - please excuse the nerdery!!
The blend
50% second use of sour cherries blended with 50% coolship saison and 50% big Foeder sour
20% second use of raspberries blended with coolship saison, 2019 Saison de Bättre barrel and big Foder Sour
30% coolship spontaneous sour ale barrels with added smaller Foeder sour.
Definitely the most complex blending we have ever done
The resulting beer is as we hoped: sour, funky and fruity.

Tap at Fermentoren Copenhagen. Poured a clear orange amber colour with little life. The aroma is yeast, citrus, vinegar. The flavour is moderate sour, with a fresh, crisp, tart, raspberry citrus, vinegar, acidic, warm, herbal palate. Medium bodied with soft carbonation.

(Draught at Akkurat, Stockholm, 30 June 2022) Orange red colour with brief head. Fruity, sourish nose with pink grapefruit, cherries, blood orange and almonds. Fruity, tart taste with notes of pink grapefruit, blood orange, cherries, raspberries, vanilla, almonds, lemon, vinegar and a dry and tart finish. Medium body, dry. Tart, fresh and tasty, with lots of red fruit. Very nice.

From tap @ Cool Head Craft Beer Garden 2022. Poured hazy and orange in color. Vinegary, tart brew with raspberry burps. Acidic. Fairly complex.

--Keg at Akkurat, Stockholm. -- Clear orange, small head. Aroma of vinegar and red berries. Tart and citric, red berries and mild funk. Low bitterness.
