Three Cherries is a fermentation project conceived by Martin Berkley of Pilton Cider, bringing together Pilton Cider, Little Pomona, and us at Once Upon a Tree.
The starting point? Wonderful, ripe, dessert cherries from our Haygrove farm, here in Ledbury.
The simple idea?
To take this wonderful fruit back to our respective cideries and create something magical. We undertook a carbonic maceration of the cherries with a long co-fermentation and maceration with our Dabinett Cider, before pressing and maturation.

750ml bottle from Pilton. Dark red colour, foamy head that dissipates to a thin rim and aroma of cherries, fruity, apple, spice. Taste is tart and tangy, cherry, juicy, alittle spice, apple pie, some marzipan hints, and soft tannins. Medium bodied, light carbonation, medium dry finish. Nicely drinkable.
