This March we dove into our recipe notebooks looking for ideas to inspire the ultimate session-able stout recipe. Here is Ostara Stout our take on the concept of 'Dublin Stout'. Brewed to be complex but quaffable. We took some of our imperial stout tricks and adapted them to a lower ABV base recipe. The result has layered malts with some lovely soft chocolate notes finished with a nice hop zing to help clean the palate. Sláinte

Nitro at Ammutsøn, Wien. Lightly cloudy, black colored. AROMA- roasted, plum, prunes, leafy and herbal, dark chocolate, a bit earthy. FLAVOR- dry, slightly sour, moderately bitter, roasted, dark chocolate, coffee, floral and earthy. Medium bodied. Nice Irish stout.

Tap at the black sheep Dublin. An opaque black brown coloured pour with a dense khaki head. Aroma is earthy roast, light char, woody roast,. Flavour is composed of robust roast, char, liquorice, meaty roast, dry roasted grains. Earthy.. Dark choc. Palate is semi sweet,

0.3l tap. Murky dark brown with a creamy head. Intensely smoked malt, rubber, leather, earthy notes, burnt malt, toffee, lemon, arabica coffee beans. Dry roasty bitterness, some dry sourness. Medium bodied, oily texture, soft carbonated, dry bitter roasty finish. Great Dry Stout!

On tap at Le Barboteur. Black with creamy beige head. Chocolate, some coffee, quite sweet and somewhat sticky. Smooth texture. For some reason it's too sweet.

330ml can. Quasi black colour with average, frothy, half-way lasting, moderately lacing, dark beige head. Roasty, dark malty and slightly wheaty malty aroma, hints of cold coffee, coffee beans, a touch of brown sugar, whiffs of tar and ashes. Taste is initially moderately bitter, roasty, dark malty, slightly chocolately, hints of cold coffee and dark chocolate, increasing, dry- and bitterness; dry finish. Creamy-oily texture, smooth and soft, simultaneously dry palate, very fine, soft, creamy, mildly prickly carbonation. Homogeneous, fairly complex, quite drinkable nevertheless - decent.
