This March we dove into our recipe notebooks looking for ideas to inspire the ultimate session-able stout recipe. Here is Ostara Stout our take on the concept of 'Dublin Stout'. Brewed to be complex but quaffable. We took some of our imperial stout tricks and adapted them to a lower ABV base recipe. The result has layered malts with some lovely soft chocolate notes finished with a nice hop zing to help clean the palate. Sláinte

Hand pumped at FOB, Rimini, Italy. Pours dark plum, almost black, with very fine, light brown foam. Aroma is delicate of coffee and chocolate, a little licorice. Body is on the thin side, with no carbonation at all. Taste is moderately roasty, with a little bit of sweet in the final, otherwise fairly dry.

Glass at beer temple, Dublin. Black beer, small head. Aroma is roast, malt, coffee. Taste is the same, sweet, liquorice, malty, bitter. Nice

Keg at Brewdock, Dublin, 26/01/23. Black with a tan cap that retains well. Nose is mellow roast, burnt toffee, dried fruit rinds, cocoa powder. Taste comprises chocolate biscuit, dark fruit rinds, spice, charr, ashen tones, caramel streak. Medium bodied, fine carbonation, light drying close. Solid stout.

Very dark brown colour with thin creamy head. Lots of malts. Roasted, bitter. Notes of coffee and dark chocolate. Silky.

Draft at Northern Lights 5th Anniversary party. Mahogany maroon color, large tan head. Earthy coffee and cocoa grounds aroma. Taste is earthy fruity coffee. Tasty stuff.

--Keg at The Brew Dock, Dublin. -- Black, dense creamy head. Restrained tarry coffee aroma. Mid sweet with medium body and rounded mouthfeel. Creamy and carmelly with coffee and syrup. Mid bitter finish.

Draught @ Salt House. Rated on 04.09.2022 Aroma has coffee, toffee and mild ashy tones. Flavour has licorice, ash, some bitter coffee and dark chocolate. Also saltiness. Quite intense for the ABV. Good.

Pint from tap at The Beer Temple, Dublin. Black color, small tan head. Smells toffee, earthy, cocoa, spices. Nice smell. Medium body, light carbonation. Tastes nutty, hazelnuts, creamy, earthy, toffee. Finishes lightly roasty bitter with notes of toffee, earthy and nutty notes. Very good one, very good to drink, nice complexity
