ベースとなるのはフルーツエール。この季節にピッタリの材料としてパイナップルをふんだんに使用。そこに、ココナッツミルクをブレンドすることで、甘さにアクセント、香りにトロピカル感を演出しています。その上に重ねたのが、スパイス。今回は、トンカビーンズ、シナモン、クローブを使用しました。仕上がりは、パイナップルの香りをたたえた優しいフルーツエールですが、ほのかな酸味の奥にココナッツのトロピカルな味わいと、スパイス由来の甘みを思わせる香りが複雑に絡み合っています。

The base beer is a fruit ale. Pineapple is used in abundance as the perfect for this season. Coconut milk is blended in to accentuate the sweetness and create a tropical aroma. Layered on top are the spices. In this case, we used tonka beans, cinnamon, and cloves. These spices are used in small quantities in pastries to bring much more depth to the aroma and flavor. The finished product is a fruit ale with a rich pineapple aroma. Behind the subtle acidity is a complex combination of tropical flavors of coconut and aromas reminiscent of spice-derived sweetness. There is a slight bitterness derived from the small amount of Simcoe hops used to tighten the overall flavor.
