This small batch Schaarbeekse Kriek was macerated on an ex-Bordeaux barrel. These local sour cherries were harvested in the summer of 2020 by +70 families around Brussels, and we macerated these for more than six months. For macerating and blending, we used lambikken from two different barrels and three different brews. About 30% of our lambikken was brewed with cereals from our Cereal Collective.
The final fruit intensity amounts up to 369 grams of Schaarbeekse sour cherries per litre. 100% 3 Fonteinen brewed lambik.
