Knowledge Is Power is our new beer series to increase flavor intensity and develop and improve the complexity of our beers. We want to translate scientific findings into liquid story experiences you can enjoy.
In Knowledge Is Power #1 we brewed a hazy IPA with coriander seeds. For reasons of comparison we brewed the same IPA without coriander seeds at the same time.
Malts: Pilsner malt, Chit malt
Whirlpool : Citra, Centennial
Dry hop: Citra, Centennial
Specialty: Coriander seeds
Our goal is to improve the over all hop profile, creating a greater flavor stability and to gain some complexity without the possible disadvantages of even higher hopping rates. By saying this, the focus is on the hop profile. We do not want to let the coriander seeds shine. Think about a spice mixture like curry or garam masala, where different ingredients create almost a new unique flavor.

0,44 l can from their online shop. Cloudy yellow golden with a small one finger white head in the glass. Dry tropical fruity on the nose, some citrus sweetness. Taste starts with an increasing dry malty grainy bitterness, grape, some pepper. Nearly no sweetness in the second part. Metallic hints in the aftertaste. Below average carbonated.
44cl can. A hazy dark golden beer with off white head. Aroma of orange fruits, herbs, grapefruit, tangerine. Taste of citrusy hops, orange fruits, herbs, grapefruit.

Deutlich gewürziger Geruch. Im Antrunk würziger als bei der konkurrierenden Version, so dass die Zeit, bis die Hopfigkeit ansteigt, besser überbrückt wird. Spritzig, weiche Bitterkeit, langer Nachgeschmack. Gut. 10/11/12/12/8/11

Small to medium white head over hazy yellow beer. Exotic fruit hops, maybe a tad more spicy (than the without coriander version). Hint of meaty esters, but mostly exotic fruit & citrus. Bitter, hoppy, metallic and dry-spicy, peppery bitterness. Finish is quite bitter indeed, dry; old clothes (the coriander, no doubt). Bit chewy, dry-out effect, medium to good carbonation. Dry, bit peppery flavour making out the slight difference with the uncoriandered version. I prefer the unadulterated version, but I will immediately agree the difference is very slight indeed. To all coriandersoup producers: here the coriander is RESTRAINED.

Pours a hazed blonde, medium sized white head. Scent is fruity, about similar to the without coriander seeds version, but with a mild herbal touch - wouldn't call out straight coriander if tasted blind, but definately another layer to it. Taste is still very stonefruity - just like the other version. C>oriander - if anything - pumps that up, even - rather than being super specific on it's own. It does give it a more robust, herbal back - even a touch of the typical 'coriander soapyness' , but balance (with the seeds) has definately been kept in mind. Decent IPA, for sure, perhaps it's a bit much on the high stonefruit aroma, for the second day in a row (having drank the other one yesterday), and so I think I enjoyed the without version a bit more - to bad I haven't been able to drink em side by side, but 2x0.5l is a bit much on my own :)
