We first fermented the Red grapes from Glimmen on their own skins into a beautiful natural wine. Separately, we have made elderflower lambic with handpicked aromatic elderflower from Aduard. We then blended both with lambic into a beautiful fresh wine/lambic hybrid.

I think I tasted this when it was bottled, fun to see how it turned out. Very nicely! Plenty of grape, fairly dry, with the lambic giving a nice acidity and some sharpness. Funky. The elderflower providing very subtle nuance.
