Brewed in collaboration with our friends at Heist Brew Co we took inspiration from Hungarian palinka to produce this Flanders Red style beer. We blended 80% provision strength ‘young’ stock beer aged in steel, with around 20% ‘mature’ stock beer aged in Calvados oak barrels. We used these brandy barrels to provide spirit character reminiscent of the palinka.
This blended base was transferred onto 250g/l of 2022 harvest of Victoria plums, sourced from Pittormie fruit farm, located seven miles from the brewery.

Tap at the Van Moll festival. Loaded with plums, it’s pretty funky, with surprisingly low level of acidity that further enhances drinkability.

Keg at Salthorse, Edinburgh, 24/02/23. Lightly hazed reddish amber with a beige cap that thins to the edge. Nose is tarte berry fruits, vinous, funk, dry rot, fruit balsams, acidic nostril tickle. Taste comprises wood must, damp oak, bracing acidity, funk, dried red berries, sharp tangy fruit esters, berry stones. Medium bodied, fine carbonation, dying close spiked with an acidic rise. Decent kit.

Dyp rødbrun farge med tynt skum. Lukter trevirke og noe bær. Syrlig og smaker plomme, kirsebær og sure bær.

Lovely acidic sourness, with a bit of oaky presence. Lovely sweet plums counter the sour, and provide balance and flavour. Little bit of funk, but it's mostly about the acidity and the fruit.

Keg at the hanging bat. Pours deep brown, nose is funk, oak, some red fruit, taste is brett funk, savoury, light fruit, oak.
