A blend of 75% Dabinett (from 2019) which spent time in oak barrels and 25% culinary and dessert apples (from 2020). The result is full of smoky notes, chewy tannins and a brisk acidity. Inspired by our friends at Ross on Wye Cider & Perry, with thanks for their generosity of time and sharing of knowledge. Bottle conditioned with 10g/l of sugar, which has created a mouth filling frothy mousse.

Panda at home, thanks to Ed Danlo, 11/03/23. Clear golden with a moderate just off white covering. Nose is crisp apple, orchard wood, straw, tannins, apple skins. Taste comprises tangy apple, light smoke, apple core, vinous, earthy, hedgerow. Medium bodied, fine carbonation, drying close. Solid kit.

Panda 🐼 at home big thanks to Ed Danlo. A clear golden yellow colpured pour with a halo of white head. Aroma is semi sweet, some candy apple, some spicy, lychee, tangy green apple, midget gems. floral notes.Flavour is composed of super dry, crisp, tcp, phenols, medicinal, lemon squeze, super crisp, Palate is crisp and tart, fine carbonation. Smoky finish.

750ml bottle from Cat in the Glass. Slightly hazy yellow golden colour, foamy white head that quickly dissipates to a thin layer and aroma of smoke, apple, leathery funk, oil, unami. Taste is tangy, tart, fleshy green apple, smoked wood, fruity, funky, leather, earthy, salty, with drying tannin. Medium bodied, light carbonation, drying salty tannic finish. Very drinkable.
