Kind of reminds me a little bit of my grandma's green watermelon pickles which were on the sweet side though and of course had a lot more watermelon flavor of the rind. Anyway, I pick up very little watermelon in aroma or flavor. Besides that, I pick up some vinegar, wheat, salt and weed. Flavors are similar to nose, salt comes through a little bit more, moderately tart with a little sweet in the finish.
