Ghost Particle is one of the most complex and evolving liquids we have produced. A blend of four unique regional wildflower honeys were independently fermented with four different yeasts. We utilized component blending prior to aging in a former J Wakefield Bake Kujira Maple Cognac barrel.
This is a spirit drinkers mead. Extended barrel contact time resulted in aromas of heavy oak, toasted marshmallow, and caramelized brown sugar. As this project opens up via decanting, the barrel heat dissipates and reveals a lingering maple candy sweetness that remains on the palate long after the liquid is gone.

Appearance - 7 | Aroma - 7.5 | Flavor - 8 | Texture - 8 | Overall - 8
Pours clear, dark gold. Scent is full, honey, pure oak and intense, quite sharp. Taste is full, sweet, honey intense. Bit herbal. Spicy from the honey. Some alcohol, not overly great. I expected and sure as hell hoped for more. Better BA profile after opening up, that much indeed is true - but still - not near as exceptionnal as the barrel promisses.
