In this special blend, we used 40% 2 years old lambics that fermented and matured for 2 years in freshly emptied Cognac barrels.
30% 1 year old lambics and 30% 3 years old lambics were used in the blend to bring freshness and complexity, respectively.

Sample, thanks fonefan! Clear pale amber, small head. Citric nose with mild cognac and horseblanket. Citric with medium body and rounded mouthfeel. Horseblanket, lemon and woody cognac. Mid bitter finish.

Thanks fonefan! Deep golden colour, small white head. Aroma is biscuity, tart and some slight wooden tones with a bit of cognac sweetness to it. Flavour is tart wood, fruits, some nutty tones with a bit cognac sweetness with some biscuity sweet tones. Sweetish tart and somewhat dry in the aftertaste.

Bottle: Poured a golden color lambic with a medium size white foamy head with OK retention and some minor lacing. Aroma of tart notes with some funky esther and oak notes. Taste is also a mix of tart notes, funky ester with some green apple notes and some oak with very faint notes of Cognac. Body is about average with good carbonation. Enjoyable lambic but the Cognac notes are too faint.

Nice bubbly-creamy mediumlasting head, slightly cloudy golden color. Aroma is slightly dry sour-ish floral, cellar, oak, berry skin, minerals, old rope, mild vinegar, fruit stones, unripe fruits, citrus. Taste is dry sour-ish fruity, unripe berries, oak, sorrel, old rope, citrus, hay, berry skin, light malts, fruit stones, flowers, sour stonefruits. Medium bitterness, slightly dry sour-ish fruity mouthfeel. Nice.

Bottle shared at craft beer junction bermondsey tasting. Many thanks to Daniel. A light hazed brushed gold yellow coloured pour with a a loose white head. Aroma is light peat, tart, lemon, mellow funk, woody,.. Flavour is crisp, light earthy grains, lemon rind, peaty notes, lemon rind, weird funk, green apple, nice complexity. Palate is semi sweet, rounded, moderate carbonation, nice. Quite unusual.

Pours a light hazy golden body with no head to speak of. Aroma's: sourish, light funky, boozy, cognac. Retronasal: sourish, somewhat sweetish as well,cognac, wood/tannines. Flavour issour with hints of sweet and bitter. Light bodied. Finishes a little dry and light bitter. Quite enjoyable.
