Velvet Evolution is a smooth Wild Ale and definitely one of Jitka's favorite beers. As soon as she moved to Dolní Dunajovice, it was clear that she needed more apricots for her beers. So she and her husband bought an apricot orchard. You can find it above Hustopeče on Kamené vrch, and in 2021 they held the first harvest here, which they used for the production of this spontaneously fermented beer.

Tap at Salon piva. 2020 vintage. Thin body, med-high carbonation. Med-light sourness, moderately tart, very easy drinking though. Nice complex mix of acids too. Rather restrained funk per se, making place for a mounting apricot presence, which goes from subtle to pretty intense in a few sips. Feels a bit simple, but that is a deceptive feeling and it makes for a very easy drinking rewarding wild ale at the same time. Very good.

Bottle at Raven. Murky dark orange body, off-white head. Creamy peachy aroma, light lactic notes and funky, wild yeast notes. Lean taste, leathery, peachy, bitter, dry, slightly astringent. Not the best Wild Creatures, but still highly respectable, as all of their beers usually are!
