This beer is brewed like a German Dortmunder Export with imported Barke Pilsner Malt and Hallertau Mittelfruh hops. We performed a traditional step mash followed by a lengthy single decoction to increase melanoidins, and fermented cold with our favorite German lager yeast. After primary fermentation, this beer was transferred into our French oak puncheons and left to mingle with our house Brettanomyces culture for 14 months. On the palate, this wild lagerbier is Brett forward with notes of hay, leather, earth, and lemon rind funk. Enjoy now or cellar for the years to come.
