We lieten de Grand Cru 1 jaar rijpen op een Dominicaans rumvat, waarop eerst een cider heeft gerijpt. Na het afvullen op fles is het bier 3 maanden hergist op champagnegist, waarna we deze volgens de traditionele methode hebben verwijderd. Het resultaat is een complex bier met een frisse zurigheid van appels, een subtiele zoetigheid van de Grand Cru en een zachte kruidigheid afkomstig van het rumvat.

Small whitish rim over clear golden beer. A light, very fine lemony aroma, with some white candi sugar and grains. Little vinous touch - and a whiff of ketone. Sweet-almondy-perfumey - very unsettling flavour (the rum - which I didn't know was added - might well explain this). Retronasal the lemon returning - a bit like fruitgums for adults. Quite spritzy, sparkling feel with a not-quite-light body. Bit slick & smooth at the same time. The truth has its rights. I was, once more, expecting yet another dreary beer trying to emulate the Champagne it was styled on, and failing miserably. But this one definitely stands above those, and on its own. And its much better than the French bubbly!
