We pressed different varieties of Normandy poiré-pears (Plant de Blanc, Vinot, Gaubert…) harvested at ‘Ferme de L’yonnière’ (Jérôme Forget), and co-fermented this juice with the juice from local heirloom apple varieties. With just a mimimal practice of ‘soutirage’, this poiré-cider finishes bone-dry.

0,75l bottle at Carnivale Brett, Amsterdam. yellow clear color, small white head. smells apples, pears, minerals, subtle tannins, bit grassy. full body, soft carbonation. tastes apples, pears, tannins, lightly funky, earthy. finishes dry and light to medium sour with notes of apples, pears and funky notes. Very nice one, very mature apple cider, great complexity
