A collaboration between Cantina Giardino and Cantillon. A blend of Greco di Tufo pomace and 2-year-old lambic. Before being blended with the lambic, the grapes underwent a pellicular in amphora for almost a year.

Clear, white gold. Good amount of frothy, white head.
Mineral and wine skin with mild lactic and fruity Brett. Stone fruit-like acidity with a round juiciness.
Soft and malty with white grape, white peach and hints of lemon. Brett-forward with a fair bit of lactic acidity lingering. Good minerality. Not too acidic. Very drinkable.

Side by Side with Cantina Giardino Sophia 2021. Wine is less exciting. Nice vinous white wine and some dessert grape sweetness. Still a touch of stone fruit. Some pedio. Smooth, opens nicely with a proper farmy funk

0,75l bottle at Cantillon. Light yellow hazy color, small white head. smells grapes, grassy, earthy. full body, soft carbonation. tastes peppery, grapes, bit earthy. finishes lightly dry and lightly sour with notes of grapes, pepper and earthy notes. love this one, super delicate balance, awesome stuff.
