One of the most elaborate beers we ever brewed. And that alone says a lot. It all started last year. First we brewed a single grain barleywine using an heritage barley from Denmark, cultivated and malted by our friends at Gyrup. The beer rested in port wine barrels for 9 months.
Next we took a portion of The Shape of Brewing, another wine-style ale, and innoculate the same yeast used to mature Sherry Wine, by introducing controlled micro-amounts of oxygen we slowly oxidized the beer, developing groundbreaking aromas and flavors.
Then it came the art of assemblage, the mix between the Heirloom Barleywine, the Oxidized Wine-Style Ale made something unique. To round the edges we picked another favorite barrel, filled with a luscious Spelt Stout, and made a unique combination, set to impress whoever has an opportunity to grab this can. This can was filled with live yeast to you can expect the flavors to further develop with time.

Can at home, from HOTM online, 22/10/23. Hazed mahogany brown with a decent beige cap that dissipates to a swirl. Nose is fruit cake mix, caramel, booze, sherry nip, dates, figs, dark malts. Taste comprises figs, brown sugar melt, toffee, fruit cake, mellow sherry, prunes, more port coming through than sherry in the taste. Full bodied, fine carbonation, semi drying close with a balanced kiss of alcohol. Decent sipper.

dark brown to mahogany colour, one inch of creamy beige-ish ecru head; aroma of raisins, prune, dried sour cherry, licorice, maple syrup, burnt sugar, red wine and slight vanilla notes; taste is the same with definite port wine notes; excellent one!

Can from HavnensVinOgTobak. Pours dark cola brown with medium white head. Aroma is intense malt syrup, raisins, prunes, port wine, toffee, sweet liquorice and plum jam. Taste is very sweet, light to medium bitter and light acidic. Body is creamy with fizzy carbonation. Finish is long and mostly sweet with notes of malt syrup, raisins, prunes, plum jam, port wine, toffee, sweet liquorice, vanilla and oak barrel. Well balanced

Can at home. Pours deep reddish amber, nose is raspberry, caramel, vanilla, fig, jam, taste is similar, sweet, chewy, little nutty.

Can 12%. Dark brown with small off-white head. Aroma is malt, caramel, toasted, dark fruit and sherry. Flavour is malt, caramel, toasted, sweet, dark fruit, sherry, oak-ish and a little bitter.

Can from HOTM at home. Deep chocolate brown to black colour with a thin head. Aroma and taste are rich malty and caramel sweet, sweetish wine. Full rich body

Tap@Taphouse, Copenhagen (Moersleutel 7 years deadly sins TTO 02/07/2023) - pours almost black with a creamy off white to beige head. Sweet and light toasted malty with notes of dried fruit shred, nice spices, sweet molasses, getting the interplay of the BA sherry and port washed wooden accents, vinous and nicely spiced into the warming malty finish.
