One of the most elaborate beers we ever brewed. And that alone says a lot. It all started last year. First we brewed a single grain barleywine using an heritage barley from Denmark, cultivated and malted by our friends at Gyrup. The beer rested in port wine barrels for 9 months.
Next we took a portion of The Shape of Brewing, another wine-style ale, and innoculate the same yeast used to mature Sherry Wine, by introducing controlled micro-amounts of oxygen we slowly oxidized the beer, developing groundbreaking aromas and flavors.
Then it came the art of assemblage, the mix between the Heirloom Barleywine, the Oxidized Wine-Style Ale made something unique. To round the edges we picked another favorite barrel, filled with a luscious Spelt Stout, and made a unique combination, set to impress whoever has an opportunity to grab this can. This can was filled with live yeast to you can expect the flavors to further develop with time.

Can from Øl2Go @ Home. Pours clear very dark amber with a creamy tan head. Aroma of malt, caramel, wood, dried fruit, mild spice. Flavor is sweet, rich malty, caramel, loads of dried fruit, wood, port / Sherry, light alcohol. Medium body, soft to average carbonation, sweet finish with light warming alchol. 100825

Can at home, 9th February 24. Pours a chestnut brown, lots of head for the style. Aroma is rich, dark fruits, malts, caramel, Sherry, wood. Taste is sweet, Sherry, dark fruits, caramel. Nice but very sweet.

3rd February 2023 Can. Pretty much a clear deep amber beer, small pale tan head. Light and smooth palate, semi dry with decent fine carbonation coming through on the back end. Light smooth malts, a decent creamy caramel streak. The Port barreling comes through clearly with good berry fruits, both dark and red berries, blackberry and ripe sorta bruised strawberry. Plus just general Port Wine mature berry goodness! Smooth and semi dry finish brings forth a little more of that caramel vibe and something of the secondary sherry barrel, which is the principally described barrel but, flavour wise, for me, the secondary but cherry-on-top aspect.A rather good barleywine that serves it's barrel very well indeed.

Can. Chestnut color, yellowish foam. Aroma: sweet, sherry, caramel, toffee, a drop of whisky, raisins and candied fruits. Taste: sweetish, caramel, sherry, oak, toffee and vanilla, candied fruits, good.

6/12/2023. Can shared by Colin, cheers. Pours very dark brown with a small bubbly beige head. Aroma is rich, boozy, dark chocolate, toffee, wood, dark fruits, raisins, brown sugar. Medium sweetness and moderate roasted bitterness. Full bodied, very smooth, soft carbonation. Very good.

Panda thanks to Cloin: Poured a dark caramel swirled brown with a khaki head. Aroma is super boozy at first whiff, dark fruits, sticky, woodsy, caramel. Taste is boozy, dark fruits, figs, dates, woodsy, vanilla, caramel, sticky sugary and warming alcohol stays around in the finish.

Aroma: Dried fruits with prunes and dades. Flavour: Sweet malt with dried fruits and plumbs. Aftertaste is fruity sweet with alcoholic warmth. Colour: Dark reddish brown with an offwhite head. From: Can @ Kihoskh webshop.

Panda courtesy of Theydon_Bois, cheers Colin! Dark brown colour, bubbly beige foam head and aroma of malt, toffee, woody oak, vanilla, fruity, booze. Taste is sweet, malty, toffee, caramel, orange, wood barrel, vanilla, brown sugar, raisins, with booze and fruity bitterness. Medium to full bodied, soft carbonation, drying boozy finish. Nicely drinkable.

440ml can @ monthly tasting, Chez Sophie, Oct 23. Cheers Mike for this! Pours very dark brown, menacing dark brown head. Big aroma of dark malt, bitter dark chocolate, port wine, continuing to taste with complex sherry, dark port, dark chocolate.. big one this. Proper.

30th October 2023, Chez Sophie Monthly Gathering, five guys, beers and bollox. 440ml can: BB 17th May 2025, cheers Simon for this offering. Brown bodied, moody looking, solid sweet Barley Wine, needs to be sipped in slow time rather than gulped at a tasting where time is short.
