A blend of 90% 2021 Dabinett and 10% 2022 Dabinett, with the latter season’s cider lifting the sweetness yet maintaining an elegant dryness. Six months in Caol Ila whisky barrels introduced a subtle hint of peatiness to complement Dabinett’s bold profile.

Panda at home, thanks to Ed Danlo, 14/09/23. Deep golden to copper with a fast escaping white head. Nose is sharp apple, peated notes, hay bale, orchard wood, caramelised apples. Taste comprises bitter apples, toffee, burnt sugars, oak, vinous, tannins, mellow peat, apple pie scorch. Medium bodied, fine carbonation, drying close. Solid flavoursome stuff.

7/8/2023. Bottle shared by danlo, cheers Ed! Pours slightly hazy dark golden amber with minimal head. Aroma is woody, peaty, whisky, musty apple, petroleum jelly. Moderate sweetness and medium bitterness with a slight tart edge. Medium body, smooth, low carbonation. Very dry woody peaty finish. Enjoyable.

750ml bottle from Caps & Taps. Orange gold colour, no head and aroma of apple, islay cask whisky, peaty, phenolic. Taste is sweet, mellow apple, ripe fruity, with drying notes of whisky barrel, peat, phenols, wood, oak, citric, alittle funk and some bittersweet tannin. Smooth oily mouthfeel, medium bodied, low carbonation, lingering peaty islay cask with the dry tannic finish. Very drinkable.
