Naturally Sparkling Dry Fine Cider
A blend of hand picked Scottish eating & cooking apples varieties, spontaneously fermented in stainless steel tanks, ex-sherry barrels and a virgin Chestnut barrel, bottled Pet Nat Style.
The result is a light & wonderfully fresh cider, with green apple & elderflower on the nose, some lovely layered acidity, & the tiniest smidge of tannin to hold everything together. All complimented by a light natural sparkle, a hint of minerality and oaky flavours. Fermented with wild yeasts.

750ml bottle from Cork & Cask. Bottle 65/500. Slightly hazed yellow gold colour, short-lived white foam head that dissipates to a thin rim and aroma of juicy apple, barrel notes, hint of funk. Taste is sweetish, apple, fruity, juicy, citric, with wood barrel, oak, chestnut, some zingy tartness and slight tannin. Slick mouthfeel, medium bodied, light carbonation, drying light tart & tannic finish. Nicely drinkable.
