This is another foray into unrestrained bittersweet fruit, slowly fermented with the Rural Method; a method that Beccy and Sam are really starting to make their own and perfect. A blend of Yarlington Mill, Harry Masters Jersey and Chisel Jersey with a tiny portion of Browns to help the fermentation get off to a smooth start.

With plenty of tannin, ripe fruit and phenolics, this pairs really well with hard cheeses, rich creamy stews/pies and game. Drink cool, not cold. Hand picked fruit, wild yeast and no additives as always from Wilding.

750ml bottle from Fine Cider Co. Hazy orangey gold colour, afew short-lived bubbles on top and aroma of apple, fruity, funk, slight muck hint. Taste is sweet, apple, fruity, juicy, with some orchardy barnyard funk and bittersweet tannins. Medium bodied, low carbonation, medium-dry funky tannic finish,. Nicely drinkable.
