The wheel of the year has turned and the light is beginning to creep back in. Imbolc is the Celtic festival of renewal. Gambolling lambs begin to appear in the fields, the first vigorous green shoots spring from the soil and like a slow motion firework display, snow drops and crocuses explode to reveal their fragile beauty, a vision of hope and promise of the season to come.
Gently sparkling with vivid fruit and tannins this is a gutsy bittersweet cider full of bold energy and bright acidity. Pair with hearty, warming stews and soups. It may still be cold and dark outside, but Spring is quietly awakening.

750ml bottle from Cat in the Glass. Bright orange gold colour, afew short-lived bubbles on top and aroma of fruity apple, fleshy, leathery funk. Taste is tangy, tart, fruity, apple, earthy, funk, leather, bittersweet, with lots of drying tannin. Medium bodied, light carbonation, dry tannic finish. Very drinkable.
