Bottle pour at salthorse, 2025 version? Pours clear golden amber, nose is pineapple, funk, toffee, plum, citrus, taste is similar, zesty. 7/8/8/8/8

Very pretty bottle. Unclear amber with a swiftly vanishing white head. Gentle, moody aroma of grainy dough, plums, apricots, boot polish, spices. Low carbonation. Sweet fruit - more apricot than plum, also some very ripe grapes - over gently tart beer with spices, herbs and in the end quite insistent peppery oak tying things up at the end (after a while the oak and the shiso leaf seem distinct). An afterthought of bitterness. Would not guess the 11.6% ABV. Not much like a saison but a lovely elegant beer.
