***WILD SAISON
HOPS: Czech Saaz and Hallertauer Mittelfrueh
This unique beer was inspired by the original way Saison style beers were made. The main difference being that the wild yeast we used was propagated in our laboratory, rather than using spontaneous fermentation methods, also our Saison was fermented in stainless.
This Saison started life mid 2020 by propagating several different yeast strains collected form a variety of plants and flowers in and around Mexico City. Each individual propagation was inspected, tested, and tasted. Then using a process of elimination, certain strains were selected, combined, and then propagated into the correct pitch size. During the process we were able to observe several different Saccharomyces yeast strains, along with Brettanomyces and Lactobacillus. Although Lactobacillus is present in this beer, there is no associated sourness from this due to the level of IBU’s present in the beer (from the hops), which inhibits the growth of Lactobacillus.
Our Wild Saison has a complex range of flavours, almost all of which were derived from the yeast. It is moderately hazy with an yellow hue, slightly spiced phenolic notes, medium body (FG 1.002). This is not the typical commercially available Saison, so keep an open mind.

The yeast profile is a bit heavier than I’m accustomed to, but it’s a really balanced and smooth. Slightly lower carbonation than most saisons. Side note: I don’t actually know if I’ve EVER gone to the same brewery 2 days in a row. Well done, Interstellar
