Mashed with local barley and spelt from Deer Creek Malthouse, hopped with an exuberant amount of Hersbrucker, fermented with our foraged yeast, and conditioned in the can for extra character and maximum tiny bubbles. Our 2021 foraged yeast reminds us of some of the most classic european examples of saison, with a lovely balance between bright fruit and classic saison spiciness. Lemon curd, layers of herbs and nuance leading to a dry and refreshing finish. Always believe!

16 oz can shared with jcos, 1/27/24. Thanks bud! Hazy yellowish-orange color, white head. Herbal, grainy, funky. Lots of spice. Citrus and earthy notes. Lightly tart. Fairly dry. Peppery on the close.

Pounder from my secret Santa. Pint glass @home, waiting for snow. Canned June '23. Voluminous head, medium gold, oily & somewhat hazed but not full on hazy. Herbal honey, lemon, faint buttered bread, strong bittergreen hops. Big herbal, botanical first sip, almost like a witbier; thyme & rose water. Strong lemon, steel spoon, plain cheerios, a touch of mint, end of the tea bag tannins. Bittergreen hops on the middle linger to the tail & give the potpourri contrast. Frothy, bittersweet, medium high acid, bit of a headache. Too floral. Reminds me of a wit.

Tap at bottle bar East Philadelphia PA. Light hazed golden yellow coloured pour with a fine white head. Aroma is semi sweet, tangy, Lychee, white peach. Sticky.. Flavour is composed of light funk, white grape, crisp, mineral. White grape, floral notes, super crisp. Palate is light tart, highish carbonation. Prickly. Ok.

Canned December 2021, drunk 9/28/22. Insanely carbonated, deep bronze, hint of haze and an enormous, rocky, off-white head. And if the appearance is reminiscent of some Duponts, so goes the nose. White and black pepper, tastefully-expressed, alongside honey and white bread. Plastery, mineral-rich yeast with lemon and herbs from the hops. All restrained and balanced with no alcohol, flaw or any unwanted esters/phenols. Heavily citrusy, which is interesting since it's not so citrusy in the nose. Not intensely or acidically-so, however, with soft, supple maltiness and good attenuation. Herbs, pepper, honey and white bread with an interesting white pepper-like spiciness lingering alongside gently bitter, herbal hops. The yeast character and, perhaps more importantly, carbonation/texture seemed to have come out much better here than Only Two Mantras.
