Cellar Eyes begins its journey to the bottle as our single hop pale ale All Alone With Everywhere To Go, a series of beers featuring unique and impactful hops we are eager to explore and showcase. Sabro® (formerly known as HBC-438) hops are a new variety from the Hop Breeding Company known for producing soft tropical coconut, ripe stone fruit and citrus notes. Once racked into oak barrels we add our house cultures for an extended secondary fermentation. After 6-8 months a dry, tart beer is ready to be dry hopped and bottle conditioned for continued development.

500 ml bottle from Tavour, 11/2/21. Clear yellow, fizzy white head. Funky, lemon, pepper, other spice, and grass. Tingly, somewhat dry. Mostly funky, but there's a light tartness as well. Nicely done. 7/4/8/3/16

500 ml bottle. Aroma is lemon juice and Brettanomyces. Flavor is lightly funky with a good amount of breath and that lemon rind / juice note. Nice level of tartness or funk that doesn’t get over bearing. Refreshing beer.

Bottle from Kent Falls: pours golden with a white head. Aroma is citrusy, generally fruity, bretty. Taste has strong citrusy hops, moderate sourness, bretty notes.
