750mL bottle, blend 3, from the brewery, drunk 6/10/25.
Clear, golden-apricot-peach. Small, fairly well-retained, peach-tinted head.
This is everything I want in a fruited wild ale nose. Lovely leathery, juicy, rich, expressive fruit but low sweetness. Brett for days with no acetic and very minimal, not acidic/aggressive lacto character. Structured and attenuated malts balance without taking the emphasis off the fruit and yeast. Oak is low, with no big tannin.
Juicy and perky with bright fruit notes immediately and good acid that is rounded by honey-like malts and soft oak. Excellent malt depth with good attenuation. Just enough malt to keep it soft, succulent and balanced, making it easy to drink the beer, instead of chore as some American sours can be. Fruit is tart, leathery, juicy; just absolutely beautifully-done. Beer is balanced and flavorful with nothing aggressive and no heavy acidity ever building up. I rate beers a lot more highly than I used to these days (I think the happier you are with life, the higher your ratings generally are). But I wholeheartedly stand behind the numbers on this one. This is everything the style needs to move towards to revive it and make it appealing to newer beer drinkers.

Bottle at share: aroma is funky, citrus and of course peach. Tart and well funked. Quite good.

Bottle, at share, thanks to Matt. Pours yellow. Peach, lemon, apricot, tart, almond. Spritzy. Good.
