To celebrate 5 years of sour beer we brewed something extra-special - a style that put this brewery on the map. 999G/L Apricot Raspberry Birthday Cake showcases the essence of what we do at Vault City: a delicately sour mixed fermentation beer with a ridiculous fruiting rate of 999 grams per litre, the legal limit of what we can use while still calling it a beer.

440ml can, on my own birthday too. Pours opaque orange with a sort of orange head. Aroma of sweet apricots, vanilla, raspberry. Taste is dominated by the apricots, the raspberries are more subtle, also incredibly sweet thanks to the white chocolate AND vanilla AND lactose, there's enough tartness left to still call it sour I guess. Very thick full body, very creamy. Yeah this is delicious but I didn't realise it had all the other non-fruit adjuncts, so was far far sweeter than I anticipated.

Keg draught at the Two-Tailed Lion, Leicester. Colour is pink/orange/yellow sludge. The fruit come across less convincingly than the sweet birthday cask notes in the aroma. Sweet taste with the intense tartness of the raspberry standing out. Thick, thick, thick body. Little carbonation. This may be one of the least 'beery' beers I've had. It's clever and pretty delicious without being knock-your-socks-off fantastic. A recommended experience.

Draft, taster. @Wee Vault, Edinburgh (Scotland). 30/07/2023 [#6.603 Global - #148 Scotland - #9 Vault City] Pours apricot smoothie with a minimal head. Aroma: raspberry, apricot, vanilla and tart. Taste: lot of apricot skin, vanilla and cream. Creamy smoothie. Taste phenomenal but...a smoothie. Next one please!
